5 BRUNCH-READY CHAMPAGNE COCKTAILS

Go beyond the mimosa with these delicious combinations you just have to try. Bottoms up!

If you tend to only sip peach bellinis or mimosas with your brunch, you've been missing out. The pleasing, sweet-dry flavor of Champagne is a worthy partner to fruits like blueberry and cranberry, and even the sweet-and-sour flavors of a margarita. Let us show you the way to a better brunch cocktail.

STRAWBERRY BELLINI

Serves 8

Ingredients
2 c. strawberries (plus extra for garnish)
One bottle (750 ml) Champagne

Directions
1. Purée strawberries and push them through a strainer. Set aside.
2. In a pitcher or large bowl, combine the entire bottle of Champagne with the strawberry purée. Stir gently to combine.
3. Divide mixture among eight chilled cocktail glasses and garnish with diced strawberries.

CRANBERRY CHAMPAGNE COOLER

Serves 10

Ingredients
¼ c. Cointreau or Triple Sec
1¼ c. red cranberry juice cocktail
½ c. plus 2 Tbsp. fresh lime juice
3 Tbsp. superfine sugar
4 c. chilled Champagne

Directions
1. Stir together Cointreau, juices and sugar. Chill, covered, 2 to 6 hours.
2. Just before serving, divide among 10 cocktail glasses and top off with Champagne.

BLUEBERRY MIMOSA

Serves 1

Ingredients
1 c. blueberries
orange juice (to taste)
Champagne (used as topper)

Directions
1. Purée blueberries in the blender. Add enough purée to fill one quarter of a cocktail glass.
2. Add a small amount of orange juice (to taste) and fill in with Champagne. Stir gently.

Bartender's note: Leftover blueberry purée can be refrigerated in an airtight container and later added to smoothies.

CHAMPAGNE MARGARITA

Serves 2

Ingredients
2 Tbsp. sugar (for rimming glasses)
2 lime wedges
4 Tbsp. Rose's Sweetened Lime Juice
2 oz. tequila
2 oz. Triple Sec
1 Tbsp. fresh squeezed lime juice
6 oz. Champagne

Directions
1. Place sugar on a plate that's large enough to fit the top of your glass.
2. Rub lime wedge the entire way around the rim of the glass, then dip rim into the sugar to coat. Repeat with other glass and set aside.
3. Fill a cocktail shaker with ice. Add Rose's Sweetened Lime Juice, tequila, Triple Sec, fresh lime juice, and Champagne. Shake gently two or three times.
4. Strain into the prepared glasses and garnish each with a lime wedge.

FRENCH 75

Serves 1

Ingredients
1 oz. gin
½ oz. simple syrup
½ oz. fresh squeezed lemon juice
Champagne (used as topper)
lemon twist (for garnish)

Directions
1. Combine gin, simple syrup and lemon juice in a cocktail shaker filled with ice.
2. Shake several times and strain into a glass.
3. Top off with Champagne and garnish with a lemon twist.
